Rava Laadu (Sweet Semolina Balls)

Semolina or Sooji or Rava is one of the most versatile items and must have in every kitchen. It is the one I resort to whenever I have to make instant tiffins or instant sweets. Be it Dosa, Idli ,Upma, Kesari( halwa), Laadus or something exotic sounding like Basbousa, the humble Rava can be molded into anything sweet or savoury. My husband is a great fan of Rava Laadus and it is one thing which he keeps asking me to make whenever he craves to eat something sweet. And this works well for me too as it can be made in a jiffy.

Rava Laadu


Rava/Sooji/Semolina – 1 cup

Sugar 1 – 11/4cup ( as per your sweet-o-meter)

Cashews – 2 tablsespoons chopped

Cardamom – 5 , powdered

Ghee/Clarified butter – 4 – 5 ladlefuls


1. Dry roast semolina till a wonderful aroma comes. Do not roast till it becomes brown

2. Let it cool and powder it in a mixie/blender.

3. Powder the sugar.

4. In a wide basin or a wide shallow plate, add the powdered rava, sugar, powdered cardamom and cashews. Mix well

5. Add ghee little by little over the dry ingredients and make it into laadus.
