Fusion dessert – Gulab Jamun Cheesecake ..For a special occasion

Birthdays are special occasion. Special occasions call for special desserts.

This gulabjamun cheesecake is one such dessert. A guaranteed show stopper and crowd pleaser.

Also, the fact that this requires no baking and is made without eggs and gelatin makes this simple to make when there is no oven and also for vegetarians.

Ingredients

For the base

1. 2 cups of powdered digestive biscuits

2. 1/4 cup of melted butter
Mix them thoroughly and spread it in a 9-inch springform pan. Press it with your fingers or a back of a spatula to make it firm. Let it set in the refrigerator for an hour at the least.
For the gulabjamun layer
1 tin of store bought ready to eat gulabjamun.

Slice them in half and arrange on top of the chilled biscuit base.

For the cheesecake filling
400 gms of cream cheese 

1 can of condensed milk

1/2 cup of hung or Greek yogurt

1/4 cup of cream
5 gms of agar agar

1 cup of water
Soak the agar agar in water for ten minutes
Mix all the other ingredients nicely..
Heat  the agar agar and water mixture and bring it to a boil. Keep stirring it till all agar agar dissolves
 the cheese mixture till it is just about warm
Pour the agar agar mixture in to the cream mixture.

Mix it well and pour it on top of the gulabjamun layer.
Chill in the refrigerator for about 6 hours minimum.
Remove the springform and slice and serve chilled…
Note- it is important that both the agar agar mixture and the cheese mixture be hot for a uniform finish. Else the agar agar will solidify.

If you see the agar agar mixture solidifying before you can mix it, you can reheat it again..
You can add powdered cardamom/elaichi or vanilla essence to the cream mixture. I added powdered elaichi.
